Potato pancakes are a great comfort food. As with just about any cooking it requires a little bit of effort. Not overwhelming though.
Peal and grade four potatoes. Use the fine grading. It just mixes better. I have tried the larger grates and it doesn't turn out as well. Beat two eggs in a separate bowl. Add about two table spoons of flour. Salt and pepper. Cut an onion up to very little pieces. As small as you can cut them.
In the bowl that you have the potatoes mix in the flour, eggs, salt, pepper, onions and maybe a few more spices.
Get your large skillet hot with about an eighth in of cooking oil. Place a wooden spoon full of the mixture in the frying pan. Let them cook thoroughly on each side. Let them dry on a cooking sheet with paper towels to absorb the grease.
Do not crowd your pan as you need to cook these in small batches. After a few minutes of sitting they will be great. They are good with butter, jelly, or apple sauce on them. A real treat.
