Fried Potatoes And Cabbage

     A nice one skillet meal to try would be fried potatoes and cabbage. A big batch does not cost a lot of money, vegetarian, makes lots of left overs, filling, tastes good (if you like cabbage and potatoes) and may also be healthy. May turn into your meatless Monday favorite!
      Get out a large skillet. My favorite is our course a large iron skillet. Peal and slice four or five potatoes. Put aside in the fridge for a few minutes. Peal and cut up two onions. Put three table spoons of oil into the skillet and bring it up to a medium heat. Arrange the potatoes in the skillet in a single layer. lightly brown them. Turn them once and add the onions.Add salt and pepper.  Place a lid on the skillet and turn the heat down to low or one on your stove. Take your head of cabbage and peal off the outer leaves. Cut the bottom off the cabbage. It is OK to cut them into fairly large strips and a lot as in reduces a great deal with cooking. Bring the heat back up to a low-medium temp. You will smell it cooking and steaming. Which is what you want. By browning the potatoes they will stay together throughout the cooking process if you do not turn them too much. 
     You can make this fairly quickly or drag it out for a meal later in the day. It depends upon your schedule. 
     Cabbage has been around a long time. It has been a staple food around the world. So give it a whirl!
