For this one I like to use the 12 inch iron skillet. Most all markets including mine have smoked sausage or Polish sausage on some kind of sale all the time. You will also need green peppers and onion. Two or three potatoes.
First thing is to heat the skillet with a dab of olive oil. You will not need much oil as the sausage has fat in it which will augment any additional need for oil. Chop up two small onions or one large one. Chop up a green pepper. Peal and dice three potatoes.
I like to cook this slow. You do however have to kick the heat up a bit to get the process going. I start slow. Kick it up for about twenty minutes and then slow it down a bit. Do not take off the lid and let it go. Salt and pepper to taste. This shouldn't take over about a half an hour.
Remove from the skillet with a slotted spoon slowly to let the grease slip out. Plate up and enjoy. Save your leftovers for work.
